The degree of roasting determines the taste. The acid and caffeine content decreases as the roasting time and temperature increase. A basic distinction is made between light (195-205°C), medium (205-220°C) and dark (220-245°C) roasting.

The sweetness of the coffee contributes to its overall balance and pleasant taste experience. It is due to the natural sugar content that forms as the coffee cherry ripens.

The acids naturally contained in the beans give each coffee its complexity and depth. It decreases as the degree of roasting increases. In the context of coffee, acidity refers to the flavor profile, not the pH.

The body of coffee refers to the sensation that arises in the mouth during consumption and the aftertaste that remains on the tongue. A full body is often perceived as pleasant.
